Oatmeal Creme Pies (with Pumpkin Spice)

Oatmeal Creme Pies with Pumpkin Spice

There’s something about oatmeal creme pies that instantly takes me back. Soft, chewy oatmeal cookies sandwiched around a sweet, creamy filling—what’s not to love? Now add a little pumpkin spice, and you’ve got a fall treat that feels nostalgic and cozy all at the same time.

These homemade Oatmeal Creme Pies with Pumpkin Spice are soft in the center, lightly crisp around the edges, and filled with a fluffy vanilla creme that has just enough pumpkin spice to make them taste like fall without overpowering the classic oatmeal cookie flavor.

And honestly, they’re easier to make than you might think.

A Cozy Twist on a Classic

The cookie base starts with softened butter, brown sugar, and granulated sugar. Creaming the butter and sugars together until light and fluffy helps create that soft, chewy texture we’re looking for. From there, an egg and vanilla add richness before the dry ingredients are mixed in.

Quick oats give these cookies their classic oatmeal texture without making them too chunky or difficult to sandwich together. A little pumpkin spice adds warmth and brings all those familiar fall flavors together.

One important tip: don't overbake these cookies. You want the edges to be set while the centers are still soft. They may look slightly underdone when they come out of the oven, but they’ll continue to set as they cool. Overbaking will leave you with a much firmer cookie—and we’re going for soft and chewy here!

Don't Skip the Creme Filling

The filling is what turns these from oatmeal cookies into oatmeal creme pies. The combination of butter, powdered sugar, vanilla, and milk creates a simple, fluffy buttercream-style filling.

I also recommend adding a little marshmallow creme. It’s optional, but it gives the filling that soft, nostalgic texture that makes these feel much closer to the classic oatmeal creme pies many of us grew up eating.

For an extra fall touch, a small amount of pumpkin spice goes into the filling, too. It’s subtle enough that the vanilla still shines through but gives every bite a little something extra.

Perfect for Fall Baking

Once the cookies are completely cooled, pipe or spread the creme onto the flat side of half of the cookies and sandwich them together. And that's it!

These would be so fun to make for a fall gathering, pack into lunchboxes, or simply keep on hand when you're craving something sweet with a cup of coffee or tea.

They're also a great make-ahead dessert. Store the finished oatmeal creme pies in an airtight container and enjoy them throughout the week.

If you love classic oatmeal creme pies, I think you’re going to love this pumpkin spice version. They have all the nostalgic goodness of the original, with just enough warm fall flavor to make them feel right at home in October.
