Copycat Crumbl Sugar Cookies

I first came across Crumbl when my husband came home with a bright pink box of cookies for my birthday in 2021. I absolutely love cookies - it satisfies my sweet tooth every time. I can forego cake, ice cream, and pastries, but I cannot pass up a cookie. Especially a Crumbl cookie. 

There was a brief time when my husband and I would order Crumbl cookies every week. It was bad, I could polish off a whole cookie and not think twice that each cookie has 500-700 calories per cookie! But it was so fun to try new flavors every week! 

Soon we realized our guilty pleasure was not sustainable for our wallets or our waistlines. 

One of their classic cookies that was on the menu each week was the Classic Pink Sugar cookie. It had pink frosting with a hint of almond flavoring and a soft sugar cookie that was light and chewy. Last year, in 2023, Crumbl Cookies announced a slight change to its weekly cookie line-up. Each week, Crumbl would feature their Milk Chocolate Chip cookie and their Classic Pink Sugar cookie along with four other flavors. Now they willl alternate with Semi-Sweet Chocolate Chunk (the best chocolate chip cookie) each week and the Classic Pink Sugar cookie will move to the rotating menu. 

I wanted to try my hand at these scrumptious sugar cookies, and I think I nailed it! If you aren’t near a Crumbl or just want to be able to make the pink sugar cookie anytime (it is not always on the menu) here is the recipe: 

Notes:

The meringue powder helps make the cookie soft. 

Don’t melt butter, that will make the cookie spread. Use cold butter, or slightly softened butter. To make mixing easier, cut the butter into small cubes. 

Also the thicker the cookie, the better! Don’t roll out your cookie too thin, it will result in a crispier cookie. 

I use Americolor’s deep pink food coloring, but less is more because the color will deepen after some time. They also have pale peony or soft pink that could work also. 

Be careful not to over bake the cookies. The cookies should still be a light color on the top and bottom of the cookie.

Using an airbake oven helps the cookies to bake evenly. Lighter colored pans are best for baking, as darker pans are better for roasting and cooking. 

I bake my cookies on silicone baking sheets, but parchment paper also works well!
